    Southern Comfort Chicken Bake Hey there, fellow foodies! Have you ever had one of those moments in the kitchen where you were absolutely convinced you were making a classic dish, only to realize halfway through that you had taken too many creative steps? Well, let me tell you about the time I thought I was making Shepherd’s Pie. Spoiler alert: I was not! But what came out of that culinary experiment turned out to be a family favorite that I am excited to share with you today! The Great Shepherd’s Pie Debacle It all started on a chilly Sunday afternoon. I had a rotisserie chicken from my local Sam’s Club that had to be used before the expiration date, a craving for something comforting, and a vague memory of Shepherd’s Pie. I ran to the kitchen and slapped on an apron. When I finally remembered, Shepherd’s Pie, as you may know, is traditionally made with ground meat, vegetables, and a mashed potato crust. Simple enough, right? I gathered my ingredients: rotisserie chicken (not ground meat, but hey, protein is protein), fire-roasted corn (a nice vegetable substitute), creamy rosemary mashed potatoes (because who doesn’t love a good mash?), some savory gravy, and – here’s where things took a turn – biscuits. Yes, you read that right! Fluffy, buttery biscuits. Delicious, yum, yum! The recipe is called Southern Comfort Chicken Bake. I have disclosed the recipe below because you must try this dish. Note:  Biscuits are made separately and carefully placed on top once the bake is complete. Recipe: Southern Comfort Chicken Bake (4 Servings) Southern Comfort Chicken Bake Here is how this delightful dish came together: Ingredients: Half a rotisserie chicken, shredded (store-bought) (season to taste) One cup fire-roasted corn (frozen) (optional) – the corn I used needed baking in the oven for 8 minutes at 400°F. Three potatoes, mashed (optional: add 1 tbsp unsalted butter, 1 tsp granulated garlic, one sprig rosemary, 1 tsp pepper) Two cups gravy (any gravy you have on hand will do) One can of biscuits (or homemade, if you are feeling fancy) – I used store-bought. Instructions: Preheat your oven to 350°F. Layer the shredded rotisserie chicken evenly at the bottom of a glass baking pan. Add the fire-roasted corn on top of the chicken, spreading it out to cover the entire layer. Spread the rosemary mashed potatoes over the corn, smoothing them out to create an even layer. Pour the gravy over the mashed potatoes, making sure to cover the entire surface. Bake in the preheated oven for 10 minutes. Add biscuits on top of the casserole once baked. The Result The result? A hearty, comforting dish that my family devoured in minutes. It was not Shepherd’s Pie, but it was a deliciously unique creation that quickly earned a spot in our regular meal rotation. We have affectionately named it the Southern Comfort Chicken Bake. It is a little bit of everything – like a pot pie, a casserole, and a biscuit bake all rolled into one.
