How to Whip Up Comforting, Hearty Meals Without the Weekend Wait! Quick dinners using instant pot. 🌟🍲

Hey there, fellow food lovers! I am Myss T, quickly visiting to help with the discovery of traditional meals made in not so traditional ways. Ever find yourself craving a hearty, comforting Sunday dinner but it is only Wednesday? I have been there! As someone who loves whipping up delicious meals but often finding myself short on time during the week, I have mastered the art of transforming Sunday favorites into easy weeknight dinners. Ready to bring a little weekend magic to your weekday meals? See my personal tips and tricks below!


Oh, the potential of Bringing Sunday Dinner Comfort to Weeknights!

First things first: let us get excited about the possibilities! Imagine coming home after a long day and being able to enjoy a meal that feels like a warm hug in no time. Sunday dinners are all about comfort and satisfaction, and with smart shortcuts, you can enjoy those same vibes any night of the week. The key? Planning and using your kitchen gadgets to their fullest potential. Especially, the appliances that are easy to clean. My favorite is Instant Pot. If you do not have one, I highly recommend the product.


See below, how I use my Instant Pot

One of my favorite tools for quick, delicious dinners is the Instant Pot. This device can turn hours-long cooking into a matter of minutes, it is magical. An Instant Pot is a multi-functional pressure cooker that can sauté, slow cook, steam, and even make yogurt! Also, an additional plus is that this appliance also cooks rice. Now, you no longer must utilize your storage space for a multitude of appliances. The Instant Pot has you covered! It comes in assorted sizes to suit different family needs, ranging from three quarts for small households to eight quarts for larger families. Take stuffed peppers, for example. Normally, these can take a while to prepare and bake, but with the Instant Pot, they are ready in a fraction of the time!


Instant Pot Stuffed Peppers with Ground Chicken (delicious)

Ingredients:

  • Four bell peppers (any color)

  • 1 lb. ground chicken

  • One cup cooked rice (Quinoa)

  • One can diced tomatoes (with juices)

  • One small onion finely chopped.

  • Two cloves’ garlic, minced.

  • 1 tsp Italian seasoning

  • 1 tsp Mrs. Dash (garlic and herb)

  • Salt and pepper to taste (optional)

  • One cup shredded mozzarella cheese

  • One cup of shredded Asiago Cheese

  • One cup shredded parmesan cheese

  • One cup chicken broth

(Tomato sauce is optional. I do not use any in my recipe.)

Instructions:

  1. Prepare the Peppers: Remove the tops of the peppers. Make sure all seeds have been removed. Wash and dry your peppers for the best taste. Save the seeds for your garden. Yes, this is a fact!

  2. Make the Filling: In a large bowl, combine ground chicken, cooked rice, diced tomatoes, onion, garlic, Italian seasoning, salt, Mrs. Dash garlic herb, and pepper. Mix well.

  3. Stuff the Peppers: Now, it is easier to use a small scoop to fill the peppers. Do not overstuff, as the filling will expand as it cooks.

  4. Cook in the Instant Pot: Pour chicken broth into the Instant Pot. Place the trivet inside and arrange the stuffed peppers on the trivet. Close the lid, set to sealing, and cook on high pressure for 10 minutes.

  5. Quick Release (use caution): Once done, perform a quick release. Open the lid and sprinkle mozzarella cheese on top of each pepper. Close the lid for another minute to melt the cheese.

  6. Serve and Enjoy: Carefully remove the peppers from the Instant Pot. Serve hot and enjoy your quick and delicious Sunday-style dinner!

I remember the first time I made these stuffed peppers on a busy Tuesday night. I was skeptical about how they would turn out in the Instant Pot, but the result was amazing! My family loved them, and I was thrilled to have made such a hearty meal without spending hours in the kitchen.
